Little Angels

It isn't Christmas unless we have batches of Angelitas during the holidays. Supposedly they are so rich one can only eat a little at a time. I guess that's true if by a little at a time one means a little one minute, then a little more the next minute, and then more and more, until there's not much left to share....
Yes, you must make more than one batch so that you can share at least a few with others!

Angelitas

Layer 1
½ cup butter ¼ cup sugar
1 egg 2 cups graham cracker crumbs (12 crackers)
5 Tbsp cocoa 1 cup flaked coconut
1 tsp vanilla ½ cup chopped nuts

Blend butter, egg, cocoa, vanilla and sugar in saucepan; cook until thick, stirring constantly so egg doesn’t curdle. While hot, blend in graham cracker crumbs, coconut, and nuts (have these ready to mix into hot mixture quickly). Press firmly into an 8x12-inch pan.

Layer 2
¼ cup butter 2 Tbsp dry instant vanilla pudding mix*
3 Tbsp milk 2 cups powdered sugar, sifted

Mix together all ingredients until smooth. Spread over Layer 1. Refrigerate until firm.

Layer 3
1 cup chocolate chips 2 Tbsp cream
1 Tbsp butter
Melt together chocolate chips, butter, and cream. Spread over top of first 2 layers; refrigerate until firm. Cut into small bite-size pieces.

Don't waste the remaining pudding mix: from a 3.4-ounce box, mix what's left as directed with 1 ½ cups milk to make pudding.

  1. I just made a batch of these tonight! I had to make them without the nuts for a friend who's deathly allergic, but I'm sure they're almost as good anyway!
